Here is a vibrant soup guaranteed to raise your vibrations! Heirloom Tomato & Sweet Potato Soup Active time: 5 minutes Total time: 40 minutes Serves 4 3 heirloom tomatoes 1 small sweet potato 1 cup broth (veggie or chicken)1/3 cup olive oil 1/4 cup fresh oregano leaves 4 cloves of garlic Sea salt & pepper Preheat oven to 400 degrees. In a cast iron skillet, combine roughly cut tomatoes, sliced potato, garlic cloves, olive oil, and a bit of salt and pepper. Mix it up, and roast for about 30 minutes, or until potatoes are very soft. Toss skillet mixture in a food processor with oregano and broth.
